Eba! African Delicacy Served on the First Saturday
What is eba?
Ebà is a Nigerian staple food eaten in West African subregion and beyond. It is made from cassava (manioc) flour, commonly known as garri. Generally, it is an acquired taste for Americans. Africans eat it about 3 times a week and love it. It is eaten without utensils. The cook makes mashed potatoes for those who do not like to try it. (About 1/2 of the Americans tried it this time.)
